Sweet Peas Please-4 Times to be exact!

Peas. Sweet Peas. Frozen Sweet Peas. Who likes them? I don't. They are odd little balls of squishy yuckiness. I have been the one to always skip on the Peas no matter how they are disguised. Chinese food is a tedious hide and seek challenge when trying to pick them out of my shrimp fried rice.

As I was looking around the freezer trying to figure what I wanted to make for you guys....I noticed a pack of frozen sweet Peas. I challenged myself to make some things with sweet peas that you normally wouldn't try. I put Daniell to work and this is what we came up with.

Pretty Darn amazing right? And yes my dear that is a sweet pea cake in the back. We will get to that later.

Sweet Pea Crostini

2 Cups Thawed Sweet Peas

1/4 Cup Parmesan Cheese

1/4 Cup White Cheddar Cheese

1 tsp minced garlic

Juice of 1/2 a lemon 🍋

2 tablespoons olive oil

Salt and Pepper Tsp of both

Crumbles bacon

Baguette of your choice cut into 1/2 inch slices buttered and lined on a sheet pan

Purée your sweet Peas and white Cheddar Cheese for about 30 seconds

Add in your minced garlic and purée...

Your mixture should start to look like chunky mashed potatoes....Add in your salt and pepper and olive oil.

Purée your mixture until everything is blended and your sweet Peas should be a bright green at this point.

I added a little Texas Pete after tasting my mix. I thought it needed an extra little kick.

Bake your toast rounds for about 5-7 minutes on 350 degrees.

Spread your sweet pea mixture on your toast and add your bacon on top. Enjoy!!!!!!! If you have a little extra Parmesan Cheese you can sprinkle a little on top. Tastes incredible and you will forget that you are even eating Peas!!

This was not my recipe so I am not going to post it but if you would like the recipe Daniell will definitely email it you! This was a great dish to disguise the flavor of the Peas because the alfredo sauce was sooo strong and so vibrant!!!

Now on to the drink of the day:

1 Cup Sweet Peas

1 Cup Spinach

1 Cup Fresh Pineapple

1 Cup Vanilla Pudding

1 Cup Vanilla Ice Cream or Yogurt

Combine all of your ingredients in a blender and blend until smooth.

Serve chilled.

Now this is a great drink for my healthy eaters. Most people wouldn't think to add Peas to a smoothie but they add a delicate earthiness to your morning pick me up.

Sweet Pea Cake with Butter Cream Icing

I know I know....why would we do this to a sweet morsel of goodness like a perfectly good cake?! But we just had to try it...

This recipe is as simple as adding bananas to your pancake mix.

Find your favorite vanilla cake recipe and just add Peas and a 1/4 cup of sugar.....
